Conditional Short answer: Yes — but only for two jobs, and only with the bag open. SC Johnson, which makes Ziploc® bags, says they “can be used in the microwave, but only to defrost or reheat food,” and that you must “leave the zipper of the bag open at least one inch to vent any steam or heat.” Cooking in one is not on the list, and the reason is a number the manufacturer publishes itself: its polyethylene has a softening point of 230 °F. That sits above the temperature reheated food reaches and below the temperature of an oven, an air fryer, or a pot of boiling water. Here’s the sourced answer for all five appliances.
Nobody reads the box, so people are either far too casual with the bag (baking in it, boiling in it) or needlessly frightened of it (the dioxin scare, below). The useful truth turns on one property: a Ziploc bag is polyethylene, the same soft, low-melting film family as a bread bag, just thicker and better sealed. Polyethylene is superb in the cold and mediocre in the heat, and every answer here follows from that.

Can you microwave Ziploc bags?
Conditional Yes, within limits the manufacturer sets narrowly. SC Johnson’s answer to “Are Ziploc® brand bags microwave safe?” is worth reading in full, because the caveats are the whole answer: the bags “can be used in the microwave, but only to defrost or reheat food – just use caution when reheating foods with a lot of sugar or fat, because they heat up very quickly. Additionally, it’s important to leave the zipper of the bag open at least one inch to vent any steam or heat.” Three restrictions in one paragraph, and most pages on this question quote none of them.
The mechanism is simple: a microwave doesn’t heat the bag, it heats the water in the food. As the FDA puts it, glass, paper, ceramic and plastic containers work “because microwaves pass through these materials” — and although “such containers cannot be heated by microwaves, they can become hot from the heat of the food cooking inside.” So the bag is only ever as hot as what it’s touching. Reheating takes food near 212°F, under polyethylene’s 230°F softening point; cooking pushes past it. The rules that follow:
- Open the zipper an inch, and lay it flat. The instruction people skip is the one that actually fails: steam in a sealed bag has nowhere to go, so it balloons and can split or spray boiling liquid when you open it. A bulging upright bag has a smaller vent and a bigger pressure problem.
- Defrost and reheat — don’t cook. The permission stops at warming food that’s already cooked and thawing food that’s already frozen. Steaming raw vegetables is outside it; SC Johnson sells a separate Zip’n Steam line for that.
- Treat fat and sugar as the danger. Cheese, bacon and jam climb far past 212°F in local hot spots while the food around them is still lukewarm — the realistic way to hole the film. Short bursts, and bin the bag afterwards rather than refilling it.

The myth: “microwaving plastic bags releases dioxins into your food”
The most durable kitchen rumour on the internet is also wrong on chemistry. Dioxins aren’t something a bag has in it waiting to leak; they’re combustion by-products needing chlorine and furnace temperatures to form at all. SC Johnson addresses the claim head-on, and its explanation is checkable rather than merely reassuring: “Dioxins only form when chlorine is combined with extremely high temperatures (such as 1,500 degrees F). The most powerful kitchen microwave oven will never reach this temperature. Even if you reached 1500F (theoretically), all Ziploc® brand products are 100% dioxin-free.” The company calls the original scare “misleading and unnecessarily alarming,” and states its bags and containers are BPA free.
Note what that does not settle. “No dioxins” is a claim about one specific chemical, not a claim that nothing at all moves from a hot bag into hot food. The honest position is narrower: the dioxin story is a myth, the vent-and-don’t-overheat rules exist for real physical reasons, and for the smallest plausible exposure, tip the food into a glass dish first.
Where the sources genuinely disagree
We publish a conditional answer rather than a clean yes because the manufacturer and the extension services don’t line up. Clemson University’s Home & Garden Information Center lists “microwave cooking bags” among safe microwave containers — and puts “thin plastic storage bags” on its list of containers that should not be used, alongside brown paper bags and unlabelled margarine tubs, because such containers “may melt, warp, or allow chemicals to migrate into food when heated.” A Ziploc storage bag is, literally, a thin plastic storage bag. What reconciles most of it is labelling and purpose: a bag its maker has cleared for defrost and reheat isn’t the same object as an unmarked produce bag, and it still isn’t cleared for cooking. Our conditional answer means exactly that, with a glass dish the more conservative choice whenever it’s convenient.
Worth knowing rather than discovering later: the “Microwave Safe” wording on this category has been challenged in court. A California class action, Cheslow v. S.C. Johnson & Son, Inc. (No. 3:25-cv-03655-WHO, N.D. Cal., filed 25 April 2025), alleges the company failed to warn that products made from polyethylene and polypropylene “release microplastics when microwaved or frozen as intended for ordinary use.” Those are allegations, not findings — reports of the case’s current status conflict and we could not verify the docket, so we make no claim about its outcome. It changes none of the physical answers here, but it is the live controversy behind the label.
Are Ziploc bags oven safe?
Unsafe No, and this isn’t a judgement call — the numbers don’t overlap. SC Johnson states its polyethylene bags have a softening point of 230 °F. Independently, the melting point of average commercial low-density polyethylene is 105 to 115 °C (221 to 239 °F). A slow oven starts near 300°F, a baking oven runs 350–400°F, a broiler far higher. No oven setting is also a temperature the bag survives, so there’s no exception to find and no “keep it short” workaround.
- Toaster ovens and warming drawers count as ovens. So does “keep warm” — low for a plastic bag is still 170–200°F of air with radiant elements in the same box, and the film goes from firm to sticky to holed over a narrow band.
- Frozen-to-oven means bag off first, and an oven bag is not the same thing. The classic mistake is a freezer bag of stew going in as-is to save washing a dish. Turkey and roasting bags are a different plastic engineered for oven heat and marked with a limit; a zipper bag is not a thin version of one. If one does melt, discard the food it touched — melted film fuses in rather than sitting on top.

Can you boil a Ziploc bag or use one for sous vide?
Unsafe Not according to the company that makes them, and it gives its reasoning in numbers rather than hedging. Asked whether its bags can be used for sous vide cooking “(placed in boiling water)”, SC Johnson answers that the only Ziploc bags that should be used for sous vide are Ziploc Endurables, “made with durable and reusable platinum silicone which can withstand extreme temperatures, up to 425°F.” The ordinary bags get an explicit exclusion: Ziploc “brand bags made with polyethylene are a great choice for food storage, but should not be used for sous vide cooking (boiling in water) as the softening point is 230°F and boiling point for water is 212°F.”
The margin is 18 degrees, which is why plenty of recipe blogs cheerfully tell you to sous vide a steak in a zipper bag and mostly get away with it — a bath at 130°F is nowhere near the film’s limit. But the maker draws its line at the method, not a dial setting: a bag pressed against a pot wall on a burner sees a hotter surface than the bath’s setting, a faulting circulator runs away upward, and holding a seam under load for hours isn’t the same test as reheating soup for two minutes. We side with the maker, as the only party that has tested the seam — use silicone pouches or bags sold for sous vide. To thaw fast instead, keep the bag sealed in cold water, changing it as it warms: its strength is being waterproof, not heatproof.
Can you put a Ziploc bag in an air fryer?
Unsafe No — an air fryer combines both of the things a zipper bag can’t survive. It’s a small convection oven running at baking temperatures, so a 230°F softening point is irrelevant to it, and it has a bare heating element with a fan blowing straight at the basket, so anything light and loose gets moved. Philips spells out that second mechanism for paper and foil: “If you put baking paper or tin foil in your Philips Airfryer without placing food on it, the baking paper or tin foil could be sucked into the heating element and start to burn.” That warning is about materials which are heat-resistant; a plastic bag has the same lift problem plus a film that liquefies on the way up.
No version of this works — not a bag under the food to catch drips, not a bag as a makeshift liner. Tip the food in and bin the bag, or use a perforated parchment round or a silicone basket liner. Can you freeze food in Ziploc bags?
Safe Yes — the freezer is the appliance these bags were designed around, and they meet the standard food-preservation specialists set. The National Center for Home Food Preservation lists what freezer packaging must be: moisture vapor resistant; durable and leakproof; not become brittle and crack at low temperatures; resistant to oil, grease or water; protect foods from absorption of off flavors or odors; easy to seal; easy to mark. A zipper freezer bag hits all seven. NCHFP puts flexible freezer bags alongside freezer wrap, freezer paper and heavy-weight foil as “suitable for dry packed products with little or no liquid,” notes they “can also be used for liquid packs,” and gives one universal instruction for the zipper type: “press to remove as much air as possible before closing.”
- Press the air out, then freeze flat. Air causes freezer burn, and a flat bag freezes faster, stacks better and thaws in a fraction of the time. Zip all but a corner, press from the bottom up, then close the corner.
- Leave headspace for anything liquid. Water expands about 9% as it freezes, so soups and stocks need room at the top — and a bag with room in it should be frozen flat, not stood up.
- Double-bag anything sharp or bony. Chops, ribs and fish frames puncture film from the inside, and a pinhole is a slow freezer-burn leak you won’t notice for a month.

The myth: “storage bags and freezer bags are the same bag in a different box”
They’re not, and you needn’t take our word for it — compare what the manufacturer claims for each line on its own product pages. The bullets for Ziploc’s gallon Freezer Bags read “Designed to help protect food against freezer burn” and “Ideal for freezing meat, poultry and fish.” The bullets for its quart Storage Bags read “Ideal for storing veggies, snacks, or other small meals” — no freezing claim, no freezer-burn claim, anywhere in the list. Freezer-grade bags use thicker film and a heavier seal, and thickness is what moisture-vapour resistance over months depends on. A storage bag is fine for leftovers you’ll eat this week; for meat, fish or batch-cooked meals, buy the freezer bags.
Are Ziploc bags dishwasher safe?
Unsafe No — and the manufacturer’s answer surprises people, because it does call the bags reusable. Asked “Are Ziploc® brand bags reusable?”, SC Johnson answers “Absolutely!” — then specifies the method: “If you’ve used the bags for food storage, we recommend handwashing.” Hand-washing, not the dishwasher. It also draws a hard line on what shouldn’t be reused at all: “We don’t recommend reusing the bag if it was used to store raw meat, fish or any allergy-triggering foods.”
The mechanical reasons stack up fast. Spray arms flatten a limp bag against whatever’s next to it, so the inside never gets washed or rinsed; a loose bag can drop through the rack onto the exposed heating element, which is hot enough to melt polyethylene onto it; and water pools in the folds, so the bag goes back in the drawer damp. Why Ziploc bags behave differently in each appliance
Every answer above comes from one number and one question. The number is 230 °F, the softening point the manufacturer publishes for its film. The question is whether the appliance lets the bag get hotter than the food inside it.
- Freezer (safe): no heat at all, and polyethylene stays flexible rather than brittle in the cold. The only variable left is film thickness — which is why the freezer line exists.
- Microwave (conditional): the energy goes into the food, so the bag only reaches food temperature, near 212°F. What makes it conditional is pressure and hot spots, not the average temperature.
- Boiling water / sous vide (unsafe): 212°F is only 18 degrees under the softening point, for hours rather than minutes, with the pot wall hotter still.
- Oven (unsafe): hot air surrounds the bag directly, so it rises to oven temperature — 300°F and up against a film melting at 221–239°F. No overlap, so no exception.
- Air fryer (unsafe): the oven problem plus a fan and a bare element. Even heat-resistant paper gets lifted into the element, as Philips warns.
- Dishwasher (unsafe): less a heat limit than a shape problem — a floppy bag can’t be sprayed, rinsed or dried, and can fall onto the element.
