Can you freeze mason jars?
Conditional Yes — freezing is what canning jars are best at outside of canning, and it’s the whole reason people ask. The catch is that water and water-based foods expand as they freeze, and glass doesn’t stretch. Every freezer rule below exists to give that expansion somewhere to go and to keep the temperature change gentle. Follow them and breakage is rare:
- Use wide-mouth, straight-sided jars. This is the single most important rule. In a straight-sided jar the freezing contents can push up against no resistance. The University of California Master Food Preservers put it plainly: straight sides “provide better protection against breakage as the contents in the jar freeze and expand.”
- Leave real headspace. Leave about ½ inch in a pint jar and 1 inch in a quart jar, and more for soupy, liquid foods that expand most. Some jars even have a molded freeze-fill line — don’t fill past it. The National Center for Home Food Preservation warns that without extra room, “expansion of the liquid could cause the jars to break at the neck.”
- Cool food before it goes in, and cool the jar before the freezer. Never ladle steaming food into a jar and never set a warm jar straight onto a freezer shelf. That fast hot-to-cold swing is classic thermal shock. Let food reach room temperature (or chill it in the fridge first), then freeze.
- Freeze upright, unstacked, until solid. Give jars space and air around them the first night; once frozen through you can rearrange them. Loosen or leave the band off until the contents are fully frozen so nothing is under pressure.
Which jars can you freeze — straight-sided vs. “shoulder” jars
The shape of the jar matters more than the brand. A straight-sided jar (the sides run straight from base to rim, usually wide-mouth) lets a freezing plug of food slide upward. A shoulder jar — the classic silhouette that curves in below the neck — traps the expanding contents under that inward curve, and the pressure concentrates right at the shoulder and cracks it. Can you microwave mason jars?
Conditional Cautiously, and not the way the manufacturer would sign off on. The physics is friendly: the U.S. Food and Drug Administration explains that microwaves “are reflected by metal; they pass through glass, paper, plastic, and similar materials; and they are absorbed by foods.” So the glass itself is essentially a window — the food heats, and the jar warms by contact, exactly as with any glass. The complication is specific to canning jars: they are annealed soda-lime glass, made to handle the gentle, even heat of a water bath, not the localized hot spots a microwave can create. Reheating in a canning jar is not a manufacturer-approved use — the jar makers publish guidance for water-bath and pressure canning, and, as the UC Master Food Preservers note, they “specifically recommend against using their jars in the oven.” Treat the microwave as your own call, not something the label backs. - Take the metal band and lid off. Metal reflects microwaves and can arc, and a sealed lid traps steam pressure. Heat the open jar only.
- Never microwave a jar straight from the freezer. Frozen-to-hot is the textbook thermal-shock shatter. Thaw in the fridge first and let the jar come up toward room temperature.

The myth: “canning jars are tough, so they can take any heat”
Because canning jars survive a rolling boiling-water bath, people assume they’re heatproof across the board — freezer, microwave, oven, all of it. They’re not, and the reason is the glass. Canning jars are annealed soda-lime glass — as the UC Master Food Preservers put it, canning-jar glass “is annealed, and annealed glass is not as strong as tempered glass.” Annealed means cooled slowly to remove internal stress, which is what lets a jar handle the even, moist heat of canning (water tops out at 212°F/100°C, and the water surrounds the jar evenly). That is a completely different demand than the dry, uneven, radiant heat of an oven, where one side of the glass can race ahead of the other. Soda-lime glass has a small thermal-shock margin to begin with: the American Ceramic Society, summarizing materials-science testing, notes it resists a temperature difference of only about 100°F (55°C), versus roughly 330°F (183°C) for borosilicate oven glass. So “it went through canning fine” tells you nothing about the oven. Match the appliance to what the jar is actually built for: cold and gentle even heat, yes; sudden or dry high heat, no.
Are mason jars oven safe?
Unsafe No — canning jars are not bakeware, and the jar makers don’t market them that way. The UC Master Food Preservers are blunt about it: baking in canning jars is “an unsafe practice, despite those cute pictures of miniature pies and cakes you see on the internet,” because “canning jars are not designed for oven use, and canning jar manufacturers specifically recommend against using their jars in the oven.” Oven heat, they add, “differs from the heat produced in boiling water and pressure canners” and “can create stress on a jar, causing it to break into sharp pieces” — and no, setting a pan of water in the oven alongside the jars does not recreate a water bath. Keep it simple:
- No oven baking. Use a loaf pan, ramekin, or dish that’s actually rated oven-safe, and reserve the jars for storage.
- No stovetop, broiler, or open flame. Those concentrate heat on one spot — the fastest way to shatter glass that isn’t rated for it.
- “Oven canning” is not canning. Capping a jar as it comes out of the oven may pull a vacuum while it cools, but the UC Master Food Preservers warn it “is not a true canning process” — the seal may be poor and oxygen can remain in the jar, so the food isn’t safely preserved.

Can you put a mason jar in an air fryer?
Unsafe No — if the oven is off-limits, the air fryer is worse. An air fryer is a small chamber with a bare heating element and a strong fan driving fast, uneven blasts of very hot air. That combination is a thermal-shock machine, and canning jars are not oven-rated glass to begin with. People also tend to pull the jar from the fridge, adding a cold start to the mix. Are mason jars dishwasher safe?
Safe Yes — the warm-water cycle is a mild, even temperature change the glass handles easily, and the dishwasher is a fine way to clean and pre-warm jars. Two cautions, both practical. First, load jars so they don’t knock together; chips and cracks from banging become stress points where a later temperature change can start a fracture — and a jar with a nick in the rim or a crack should be discarded, not reused for freezing or canning.
